Chestnuts are low in protein and fat but high in carbohydrates; they also provide Vitamins B and E along with Potassium. Chestnut powder was the original powder used in making pasta within the Roman Empire. Our Chestnut powder is pale white and fine, made from the grinding of whole Chestnuts without their bitter skins.

Chestnut Powder can be used instead of Wheat Flour, or mixed with flour in baked goods. It adds a light nutty flavor to desserts, cakes, cookies and pie crusts. Use it to thicken puddings and sauces.

Shelf Life: 10-12 Months.



Citrusy Chestnut Flour Tart

2 cups Hoosier Hill Farm Chestnut Powder
1 tsp Baking Powder
1 1/2 Sticks (12 Tbsp) Unsalted Butter, plus more for greasing pan
1 cup White Sugar
1/2 cup Milk
1/2 tsp Vanilla Extract
1/2 tsp Almond Extract
3/4 tsp Hoosier Hill Farm Sea Salt
Zest Of 1/2 Orange
Zest Of 1/2 Lemon
1/2 Cup Raw Whole Almonds, coarsely chopped and toasted
1/3 Cup Natural Sliced Toasted Almonds

Preheat oven to 375°F. Grease 10-inch cake pan with butter and reserve. Sift chestnut flour and baking powder into medium bowl and set aside. Place melted butter, sugar, milk, vanilla and almond extracts, salt and citrus zests in large bowl and beat on medium-high speed with electric hand mixer until thoroughly combined. Gradually add flour mixture, but do not over-mix. Stir in chopped almonds. Pour batter into prepared pan and sprinkle top evenly with sliced almonds. Transfer to oven to bake until browned and center is set, about 25 minutes. Remove from oven, let cool completely and slice into wedges to serve.



Chestnut Coffee Cake

1/2 cup almond flour
3/4 cup Hoosier Hill Farm Chestnut Flour
1/4 tsp Hoosier Hill Farm Ground Nutmeg
1 tsp ground cinnamon
1 tsp baking soda
1 tsp vanilla
1 tsp apple cider vinegar
1/4 cup maple syrup
3 medium eggs
2 Tbsp Hoosier Hill Farm Coconut Oil, melted

Crumb topping:
1/2 cup almond flour
1 tsp ground cinnamon
1 tsp unsweetened cocoa powder
2 Tbsp maple syrup
1/4 cup crushed chestnuts (steamed)
1-2 tsp melted Hoosier Hill Farm Coconut Oil

Preheat the oven to 350 degrees.

Grease an 8 in x 8 in pan.

In a large bowl, mix ½ cup almond flour, ¾ cup chestnut flour, ¼ tsp ground nutmeg, 1 tsp ground cinnamon, and 1 tsp baking soda. In another bowl, mix 1 tsp vanilla, 1 tsp apple cider vinegar, ¼ cup maple syrup, and 3 medium eggs until the mixture thickens. Add 2 Tbs of melted coconut oil and mix again. Combine wet and dry ingredients until just mixed. Pour the batter into a greased 8 in x 8 in pan and spread the batter out evenly with a rubber spatula. In another bowl, mix together the crumb topping. Add ½ cup almond flour, 1 tsp ground cinnamon, and 1 tsp unsweetened cocoa powder to a bowl, mix. Add 2 Tbs maple syrup, and ¼ cup crushed chestnuts to the bowl and mix. Add 1 tsp melted coconut oil and mix. If you have the right crumble consistency, stop here. If not, add another tsp. Pour the crumbles on top of the batter in the pan, making sure to evenly spread them out. Bake everything for 25 minutes, until the edges of the cake look crisp and you can poke a knife into the middle of it and it comes out clean.

Bought this flour for a new recipe I have in a paleo cookbook. It is so tasty blended with almond flour for graham crackers. They are so delicious! Must have this in paleo kitchen.
