Morel mushrooms are honeycomb capped mushrooms that are the delight of the north woods. Morel mushrooms have a wonderful buttery, woodsy flavor that is delicious with beef, game, poultry and seafood. Typically, morels range from 3/4 of an inch to 4 inches in height. Morels have a cream colored base and a dark cap. Typically found in the Pacific Northwest, morels inspire an early spring pilgrimage in a quest for this rare and delicious treat.

Although there are many beliefs, it is commonly believed that morels arrive within 20 days after the first spring frost. Hunters of the Morel Mushroom rarely reveal their harvesting locations. Furthermore, if the location of the wild mushroom is not picked clean the mushrooms will return the following spring. Because of their earthy flavor, morels are often paired with cream or white wine sauces and milder flavored meats, such as veal or chicken. They are also wonderful when partnered with grilled and roasted foods.

The taste of the morel makes it the most sought after funghi following only the truffle. Essence made from dried morels is rivaled only by the porcini. Dried morels provide much more intense flavor than fresh ones. The addition of the essence and the mushrooms themselves is sure to enhance any dish where they are a component.

Rinse well under cold running water to remove any possible debris, as dirt or stones can be lodged in the honeycomb. To rehydrate prior to use, place desired amount in a heatproof bowl and cover with boiling water. Soak until softened, typically 25 to 30 minutes, stirring occasionally to help dislodge any trapped stones or dirt. Remove from water, and examine a second time before using.

Morel Sauce
Makes 4 servings

1/4 Cup (1/2 Stick) Butter
1/4 Cup Onion, finely diced
2 Cloves Garlic, chopped
1/2 Ounce Hoosier Hill Farm Morels Mushrooms, rehydrated
1/4 Cup Dry White Wine
2 Tablespoons Heavy Cream
Fine Sea Salt
Fine Ground Black Pepper
1/2 Pound Pasta (Any Shape), cooked, or 4 pieces of chicken or fish, cooked

Melt butter in hot pan, and add onion, garlic and mushrooms. Cook until onion is translucent, being careful not to brown garlic. Deglaze with white wine and reduce by half. Add heavy cream and reduce until desired thickness is achieved. Season with salt and black pepper to taste.

We love morels. These are good, but not necessarily better than others costing a bit less.
