Hoosier Hill Farm Coconut Milk Powder, 1.5 lbs.
Powder-like, fine texture, and white, coconut milk powder is manufactured through the spray drying process of raw unsweetened coconut cream. Very soft lumps, breaks up easily. Make coconut milk or add to fruit drinks. Coconut Milk Powder is ideal for puddings, desserts, exotic dishes such as curries, and beverages like the popular Piña Colada. Use in recipes calling for coconut milk. Do not substitute for Cream of Coconut, which is extremely thick and heavily sweetened.
To reconstitute: whisk 1 Tablespoon Coconut Milk Powder into 1/4 cup warm water. Chill if desired.

Thai Green Stir-fry Rice
2 tsp oil
1/4 cup boiled french beans
1/2 cup boiled green peas
1/4 cup blanched broccoli florets
1/2 cup green curry paste , recipe below
4 cups steamed rice
1/4 cup Hoosier Hill Farm Coconut Milk Powder
2 tbsp finely chopped mint leaves (phudina)
1/4 cup finely chopped coriander (dhania) leaves
salt to taste
For The Green Curry Paste
3 green chillies , roughly chopped
4 cloves of garlic (lehsun)
1 onion , roughly chopped
10 of ginger (adrak) , roughly chopped
1 cup chopped coriander (dhania)
1 grated lemon rind
1/2 tbsp lemon juice
2 tsp coriander (dhania) powder
1 tbsp cumin seeds (jeera) powder
2 lemongrass (hare chai ki patti) stalks , chopped
1 tsp salt
4 to 5 peppercorns (kalimirch)
Grind all the ingredients in a mortar or a food processor using a little water. Keep aside.
This paste can be stored in an airtight container for a week or in the freezer in the refrigerator. Freeze for upto 3 months.
Heat the oil in a wok; add the french beans, peas and broccoli and stir-fry for 3 to 4 minutes.
Add the green curry paste and stir-fry for a couple of minutes.
Add the rice, coconut milk powder, mint leave, coriander leaves and salt and stir-fry while mixing gently. Serve hot.
