Vegan Breakfast Sausage
1 15 oz. can pinto beans
1/4 cup Hoosier Hill Farm Vital Wheat Gluten
2 Tbsp. Oat or Whole Wheat Flour
1/4 cup mushrooms, finely diced
1 tsp. onion powder
1/2 tsp. fennel
1/2 tsp. rosemary
1/2 tsp. sage
1/2 Tbsp. tomato paste
1 tsp. maple syrup
1 Tbsp. water
salt and pepper to taste
In a large mixing bowl pour in pinto beans and smash with a fork until beans are a paste. Add in the rest of the ingredients and mix to combine. The texture should be slightly firm and spongy. Heat a large skillet over medium heat. Add in 1 Tbsp. olive oil or spray with a non stick cooking spray. Shape your links (or patties, mixture works both ways). Place links in skillet and heat on medium high heat, turning them every few minutes. Once crisp, serve hot and enjoy!
