A favorite throughout the Middle East and North Africa, Zahtar, or Za'atar, is an intriguing mixture of herbs and spices prized for its distinctive zesty, herbal flavor. The sumac gives Zahtar its character sweet but tart taste, the thyme and oregano add warmth and depth and the toasted sesame seeds give the blend a rich earthiness. This herbal, sweet and salty exotic blend can be found in recipes from Lebanon, Syria, Turkey and Iran. Zahtar is traditionally mixed with olive oil to create a savory spread for flatbread or pitas, but can also be added to marinades, salad dressings, yogurt and hummus. Mixed with mayo, cream cheese or olive oil, Zahtar Spice makes a vibrant sandwich spread. Its unique flavor is an intriguing complement to grilled, roasted or stewed chicken, lamb, fish, vegetables and potatoes.

Labneh with Zahtar

Makes 1-1/2 cups
2 Cups Plain Yogurt
1/2 Teaspoon Hoosier Sea Salt
1 1/2 Teaspoons Hoosier Hill Farm Zahtar
2 Tablespoons Extra-Virgin Olive Oil, for serving
Pita Chips, for serving

Cut piece of cheesecloth or muslin towel into 1-foot square. Place cloth over strainer and pour yogurt into cloth. Add salt and Zahtar and stir lightly with spoon.
Fold corners of cloth into center and tie together with string. Place heavy plate on bag and put strainer in larger bowl to capture draining liquid.
Refrigerate for at least 12 hours. Mixture can be left for up to 3 days.
Remove mixture from bowl, discarding excess liquid. Unwrap cheesecloth and discard.
Transfer labneh to bowl and stir to break up cheese until smooth. Drizzle with olive oil and Zahtar and serve with pita chips.
