Vital Wheat Gluten is a food made from gluten, the main protein of wheat. It is made by washing wheat flour dough with water until all the starch granules have been removed, leaving the sticky insoluble gluten as an elastic mass which is then cooked before being eaten.
Vital Wheat Gluten is also called seitan, mianjin, wheat meat, gluten meat, or simply gluten.
Vital Wheat Gluten is an alternative to soybean-based foods such as tofu, which are sometimes used as meat substitutes. Some types of Vital Wheat Gluten have a chewy or stringy texture that resembles meat more than other substitutes. A small amount added to yeast bread recipes improves the texture and elasticity of the dough. If you mix 1 Tablespoon of Vital Wheat Gluten into 1 cup of all purpose flour, you get a very useful bread flour.

Vegan Breakfast Sausage
1 15 oz. can pinto beans
1/4 cup Hoosier Hill Farm Vital Wheat Gluten
2 Tbsp. Oat or Whole Wheat Flour
1/4 cup mushrooms, finely diced
1 tsp. onion powder
1/2 tsp. fennel
1/2 tsp. rosemary
1/2 tsp. sage
1/2 Tbsp. tomato paste
1 tsp. maple syrup
1 Tbsp. water
salt and pepper to taste
In a large mixing bowl pour in pinto beans and smash with a fork until beans are a paste. Add in the rest of the ingredients and mix to combine. The texture should be slightly firm and spongy. Heat a large skillet over medium heat. Add in 1 Tbsp. olive oil or spray with a non stick cooking spray. Shape your links (or patties, mixture works both ways). Place links in skillet and heat on medium high heat, turning them every few minutes. Once crisp, serve hot and enjoy!
