Pumpkin Muffins with Whole Milk Powder

These are soft, moist, bakery-style pumpkin muffins with tall domed tops and a cozy hit of fall spice in every bite. The trick to their rich, tender crumb is whole milk powder: Hoosier Hill Farm Whole Milk Powder whisks right into the dry ingredients, so you get the richness of whole milk straight from the pantry, no carton required. One ingredient, shelf-stable, and always ready when the pumpkin craving hits.

A full cup and a half of pumpkin keeps them moist, a two-temperature bake gives them that domed bakery top, and fold in a cup of chocolate chips and they become chocolate chip pumpkin muffins, the version everyone reaches for first. They come together in one bowl and are hard to stop at just one.

Ingredients

  • 1 3/4 cups (219g) all-purpose flour
  • 1 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1 1/2 tsp pumpkin pie spice
  • 1/4 tsp ground ginger
  • 1/2 tsp salt
  • 2 tbsp Hoosier Hill Farm Whole Milk Powder
  • 1/2 cup (120ml) vegetable oil
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (100g) packed brown sugar
  • 1 1/2 cups (340g) pumpkin puree
  • 2 large eggs
  • 1/4 cup (60ml) water
  • 1 cup chocolate chips (optional)
  • Coarse sugar, for sprinkling (optional)

Directions

  1. Step 1: Preheat. Set the oven to 425 degrees Fahrenheit. Line a 12-count muffin pan with paper liners or lightly grease it.
  2. Step 2: Combine the dry ingredients. In a large bowl, whisk together the flour, baking soda, cinnamon, pumpkin pie spice, ginger, salt, and whole milk powder until evenly combined.
  3. Step 3: Combine the wet ingredients. In a separate bowl, whisk together the vegetable oil, granulated sugar, brown sugar, pumpkin puree, eggs, and water until smooth.
  4. Step 4: Make the batter. Pour the wet ingredients into the dry ingredients and gently mix just until combined, avoiding overmixing. Fold in the chocolate chips if using.
  5. Step 5: Fill the pan. Divide the batter evenly between the 12 muffin cups, filling each nearly to the top. Sprinkle with coarse sugar if desired.
  6. Step 6: Bake. Bake at 425 degrees for 5 minutes. Without opening the oven, reduce the temperature to 350 degrees and continue baking for 16 to 17 minutes, until a toothpick inserted in the center comes out clean.
  7. Step 7: Cool. Let the muffins rest in the pan for 5 minutes, then transfer to a wire rack.

Tips

  • Do not overmix. Stir just until the flour disappears. Overmixing makes muffins dense and tough.
  • Use pure pumpkin, not pie filling. Pie filling is pre-sweetened and spiced and will make the batter too wet.
  • Do not skip the two-temperature bake. The hot start sets those tall, domed bakery tops; the lower finish bakes the centers through.
  • Add the chocolate chips. A cup of chips makes them a treat. Toss them in a little flour first so they do not sink.
  • Make them gluten free. Swap the all-purpose flour for a 1:1 gluten-free baking blend.
