Fluffy Pumpkin Pancakes

These are the pumpkin pancakes fall was made for: tall, tender, and genuinely fluffy, with a cozy hit of pumpkin spice in every bite. The secret to the lift is buttermilk, and you do not need a carton for it. Hoosier Hill Farm Buttermilk Powder whisks right into water to make fresh buttermilk in the bowl, so you get that classic tang and tender crumb straight from the pantry. No clabbering milk with vinegar, no half-used carton going sour in the fridge.

One cup of pumpkin keeps them moist, two kinds of leavening keep them tall, and a quick batter rest does the rest. Stack them high and drown them in maple syrup.

Yields 12 pancakes

Ingredients

  • 1/2 cup Hoosier Hill Farm Buttermilk Powder
  • 2 cups water
  • 1 cup pumpkin puree
  • 2 large eggs
  • 3 tbsp unsalted butter, melted and slightly cooled
  • 2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp pumpkin pie spice
  • 1/2 tsp salt
  • Butter and maple syrup, for serving

Directions

  1. Step 1: Make the buttermilk. In a large bowl, whisk the buttermilk powder into the 2 cups of water until smooth and dissolved. That is your buttermilk, ready to go.
  2. Step 2: Add the wet ingredients. Whisk in the pumpkin puree, eggs, melted butter, and vanilla until combined.
  3. Step 3: Mix the dry ingredients. In a separate bowl, stir together the flour, sugar, baking powder, baking soda, pumpkin pie spice, and salt.
  4. Step 4: Combine. Pour the dry ingredients over the wet and stir just until combined. Do not overmix; a few lumps are fine. Let the batter rest for 5 minutes, this is what makes them fluffy.
  5. Step 5: Cook. Heat a griddle to 325 degrees Fahrenheit or a large pan over medium heat and butter it lightly. Scoop 1/3 cup of batter per pancake, spreading gently with the back of the cup. Cook until bubbles form and the edges look dry, 1 to 2 minutes, then flip and cook until golden and cooked through, 1 to 2 minutes more.
  6. Step 6: Serve. Stack them warm with butter and maple syrup.

Tips

  • Let the batter rest. Five minutes lets the leaveners start working, which is the difference between flat and fluffy.
  • Do not overmix. Stir just until the flour disappears. Lumps are fine and keep the pancakes tender.
  • Use plain pumpkin, not pie filling. Pie filling is pre-sweetened and spiced. You want 100 percent pumpkin puree.
  • Keep them warm. Hold cooked pancakes under a clean dish towel or in a 200 degree oven while you finish the batch.
  • Make them gluten free. Swap the all-purpose flour for a 1:1 gluten-free baking blend.
