Ingredients

Directions

  1. Step 1: Prep. Preheat the oven to 350 degrees Fahrenheit. Spray and line a 9x5 loaf pan and set aside.
  2. Step 2: Reconstitute the egg and butter. Whisk the whole egg powder with 9 tablespoons water until smooth, and the butter powder with 3 tablespoons water. This replaces the 3 eggs and the melted butter.
  3. Step 3: Mix the wet ingredients. Mash the bananas and measure out 1 1/2 cups into a large bowl. Whisk in the reconstituted egg and butter, Greek yogurt, sugar, and vanilla until smooth.
  4. Step 4: Add the dry ingredients. In a separate bowl, whisk together the Pamela's flour, almond flour, egg white powder, nonfat dry milk, baking powder, cinnamon, and salt. Stir into the wet ingredients just until combined, then fold in the chocolate chips if using.
  5. Step 5: Bake. Transfer to the loaf pan and bake for 55 to 65 minutes, until a toothpick comes out clean. If the top browns before the center is done, tent it with foil.
  6. Step 6: Cool. Cool in the pan for 10 minutes, then transfer to a wire rack and cool completely before slicing, so it holds together.

Tips

  • Use very ripe bananas. Brown-spotted bananas are sweeter and keep the loaf moist.
  • Whisk the egg white powder into the dry ingredients. It blends in evenly that way and disappears into the batter.
  • Do not overbake. Protein bakes dry out fast, so pull it the moment a toothpick comes out clean.
  • Spoon and level the flours. Scooping from the bag packs in too much and dries the loaf.
  • Make muffins. Divide into a muffin tin and start checking at 20 minutes. Makes about a dozen.
