Hoosier Hill Farm Clear Jel is a modified cornstarch that aids in thickening a variety of recipes. Our classic cook-type formulation has a great tolerance for high temperatures. This makes it ideal for canning fruit pie fillings and making smooth gravies and sauces. Clear Jel works well with all types of ingredients, including acidic ones, and has a strong stability during freezing and thawing.
How to Use: When using Clear Jel to thicken a pie filling or compote, we recommend first mixing it with an equal amount of water. To thicken one batch of fruit pie filling (enough for a 9-inch pie), start by mixing 1 tablespoon of Clear Jel with 1 tablespoon of water. Use a fork or whisk to make sure the mixture is smooth. Once combined, add the mixture directly to your pot of filling. Cook for 1-2 minutes, stirring frequently, until bubbles appear. The filling will begin to thicken once removed from heat.
For thickening pie filling, the recommendation is 1 tbsp Clear Jel to 4 cups of berries and 1 ½ tbsp for six apples.
Storage: Store in a cool, dry place. We do not recommend refrigeration or freezing thickeners.

Made some apple pie filling where the recipe called for clear jel. It was delicious! The pie filling turned out great. I will say when I canned it the filling expanded beyond the 1/2 inch space I left. Next time I will leave a larger space.Having said that, I thought this was pretty expensive for a modified corn starch. I think I can get about 5 pie mix recipes out of the 3 lbs I bought. Which means it will cost about $3.75 per recipe. Yes not much but typically the thickener for canning is much cheaper. Maybe it’s the pandemic with demand being high. 🤷🏻♀️
No issues incorporating it into my turkey pot pie filling, but when I had some siphoning, the residue on the outside of the jar practically had to be blasted off. Out of 11 jars, I did have one lid sealing failure. Questioning whether I should not add thickener next time, and just thicken upon reheating and serving. Is it possible the thick, sticky nature of the filling contributed to the failure? Taste was fine, and consistency was fine. Incorporated into my recipe easily with no clumping.
It does have peanut extract so let people know before they eat.The thickener expanded a little when canned. I liked the taste 😋.

First time buying this brand and I’m impressed! This is modified food starch, so it’s safe for canning vs cornstarch. It is not a substitute for pectin in jams and jellies. It’s also good for thickening sauces, like sweet and sour sauce, where you might use flour or cornstarch. I used it for batches of peach pie filling and peach salsa last weekend and it came out nicely. I was a little nervous about texture because the color looked more cloudy than my usual brand before processing, but it turned clear in the water bath and had a smooth texture. Buying in bulk was much cheaper than buying multiple smaller tablecloths bags at my grocery store.
If your going to make any canned fruit pie filling please buy this product!!! It makes the best pies!! I use to use cornstarch but never again the fillings come out looking better than store bought filling!! Easy to do and easy to pour into a pie crust and ready to bake!! 10 out of 10 on this product!!

Perfect for canning apple pie filling! I had never heard of this before and was a little worried about purchasing from Amazon. It actually worked out great! I've made 5 batches of water bath canned apple pie filling from the Ball book. Will be getting more soon.

I would give this a minus 5 stars if I could. After only 1 year, a complete failure to jell. Other clear jel lasted 12 years until I finished it and ordered more. Loss of time and ingredients as well as the original cost.DO NOT BUY THIS PRODUCT!!!

Ordered this size and two of the smaller containers. NONE of them will thicken. My sister has been using this brand for years and I owed her one when I bought them, none of the three containers purchased will thicken. And I can’t return them. Very disappointing, especially when you have tons of apples peeled and ready to go.
Product must have been changed. Not happy with the results like past purchases. My current container 1.5 lb. is supposed to be good till 10/01/2022. It hasn't worked right since I purchased it. Aways HAVE TO ADD REGULAR CORN STARCH TO GET IT TO THICKEN, for fruit pies and fruit pie fillings.

Buyer beware. If you're looking for fruit pectin, this is not it. It showed up in my search and I ordered it. I should have read more carefully. It is modified cornstarch. It can be used in replace of fruit pectin in some cases, however it is not fruit pectin. If you're doing a search for fruit pectin on Amazon and this product pops up please be advised, it is not fruit pectin, it is nothing more than modified cornstarch. It is a suitable replacement for some applications when fruit pectin is called for. Such as baking pies. It is probably not a suitable replacement for making jams and preserves. Amazon was very understanding and refunded my money so that I could order real fruit pectin in the future.
Unfortunately I got a bad container nothing thickened and I tried making two things. My apple pie filling w my old container came out perfect the new one never thickened up no matter what disappointed for sure.
No instructions on mixing gel and adding to my mixture. The cost is expensive and should be packaged in smaller package. It will take me a long time to use the clear gel as I seldom use it. I should have used flour as the recipe called for..my mistake. I was making Hot Mustard. Turned out amazing.
This product is processed in a facility that uses wheat. I am unable to use this due to celiacs disease, and unable to refund.
The first time I used this product it was berry clumpy. I had to use an immersion blender to smooth it out. The second time was much better but still had little clumps
I am having trouble with getting lumps even when using a whisk, thinking it is me more so than product
