How to Make a Strawberry Cheesecake Sundae

All the flavor of strawberry cheesecake, none of the baking. This sundae layers creamy strawberry soft serve with soft cheesecake cubes, a sprinkle of graham cracker crumbs, and a drizzle of strawberry syrup, sweet, fruity, and just a little bit fancy. It starts with Hoosier Hill Farm Strawberry Ice Cream Mix, a real dairy soft serve made with cream and milk, naturally flavored, and colored with red beet powder instead of artificial dye. Just add water and churn.

It comes together in about 10 minutes and tastes like a slice of cheesecake in a bowl, which makes it an easy showstopper for guests or a weeknight treat.

Ingredients

11.8 oz Hoosier Hill Farm Strawberry Ice Cream Mix (one batch)
21.2 oz cold water
1 cup cheesecake cubes
1/4 cup graham cracker crumbs
Strawberry syrup, for drizzling (optional)

Directions

  1. Blend. Whisk together the strawberry soft serve mix and cold water until smooth. Churn in an ice cream machine, or freeze and stir occasionally until creamy.
  2. Layer. Scoop the prepared strawberry soft serve into bowls and top with the cheesecake cubes.
  3. Top. Sprinkle with the graham cracker crumbs, then drizzle with optional strawberry syrup and serve.

Tips

  • Keep cheesecake cubes cold. Cut them straight from the fridge and add them just before serving so they hold their shape against the soft serve.
  • Make it a parfait. For the layered look in the photo, alternate soft serve, cheesecake, and graham crumbs in a tall glass instead of a bowl.
  • Fresh berries, too. Sliced fresh strawberries alongside the cheesecake cubes add color and a juicy bite.
  • Churn firm. Soft serve straight from the machine holds the toppings best. If it is too soft, freeze it for 20 minutes before scooping.
  • No machine? No problem. Whisk the base, then freeze and stir every 30 minutes until creamy, about 3 to 4 hours. A Ninja Creami works too.

How to make cheesecake cubes

You do not need to bake anything. Use a slice of store-bought New York style cheesecake or a no-bake cheesecake, and cut it into small cubes while it is well chilled so the edges stay clean. Keep them in the fridge until the moment you assemble, since cold cubes hold their shape best on the soft serve. In a pinch, cheesecake bites from the freezer section work too.
