Banana Oat Muffins

Ingredients

  • 1 1/2 Tbsp Hoosier Hill Farm Whole Milk Powder
  • 1/3 cup melted coconut oil
  • 1/2 cup maple syrup
  • 1/4 cup water
  • 3 extra ripe bananas (mashed)
  • 1 tsp baking soda
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 3/4 cup whole wheat flour
  • 1/2 cup oats
  • Sugar for sprinkling

Directions

Step one: In a large bowl, combine coconut oil and maple syrup. Add eggs and mix until combined.

Step two: Mix in mashed bananas, water, milk powder, baking soda, vanilla, salt and cinnamon. Stir until well combined.

Step three: Slowly add in flour and oats, mixing each time until combined.

Step four: Divide batter evenly in a greased muffin pan and top batter with oats and sugar. Bake at 325 degrees for 22 minutes (or until a toothpick comes out clean)

Step five: Allow muffins to cool and enjoy!
