Slow Cooker Meatballs

Ingredients

Sauce:

 

Meatballs:

  • 1 onion, diced
  • 1 carrot, diced
  • 1/2 cup parsley
  • 2 cloves garlic
  • 1 pound ground beef
  • 1 pound ground pork
  • 2 large eggs
  • 3/4 cup breadcrumbs
  • 1/2 cup grated parmesan
  • 1 tsp salt

Directions

Step one: Pour cans of your whole plum tomatoes into your slow cooker and crush them. Mix together 1/4 cup of Hoosier Hill Farm Tomato Powder with 1/2 cup of water and stir into the slow cooker. Add in olive oil, oregano, red pepper, garlic, bay leaves, and salt. Stir together.

Step two: Make the meatballs by placing onion, carrot, parsley, and garlic into a food processor and pulse. Put this paste into a large bowl with ground beef, ground pork, eggs, breadcrumbs, grated parmesan, and salt. Form 1 1/2 inch meatballs (about 20-24) and place these balls into the slow cooker sauce.

Step three: Cover and cook on high for 4-5 hours or low for 7-8 hours.

Step four: Discard bay leaves, serve, and enjoy!
