Spinach and Feta Frittata

Ingredients

  • 6 eggs
  • ¼ cup of heavy cream using 6 Tbsp Hoosier Hill Farm Heavy Cream Powder mixed with 1 cup cold water to make 1 cup of heavy cream.
  • Finely chopped dill
  • Salt and pepper
  • 1 cup diced yellow onion
  • 1 5oz package of baby spinach
  • 1 cup feta cheese

Directions

Step one: Whisk together eggs, heavy cream, dill, salt and pepper. In an oven-safe nonstick skillet, heat oil over medium heat. Add onion and cook until soft. Once softened, add in spinach, it's okay if you have to do this in batches. Cook until almost all of the liquid has left the spinach.

Step two: Spread spinach evenly around the bottom of the skillet and sprinkle an even layer of feta cheese. Pour in the egg mixture, covering the pan evenly, and cook until the edges are set.

Step three: Move pan into an oven, preheated to 400 degrees, and bake for around 8-10 minutes or until the eggs are completely set. Allow to cool for 5 minutes before slicing and serving.
