Ingredients
- 2 lbs sweet potatoes
- 2 Tbsp Hoosier Hill Farm Honey Powder
- 2 Tbsp olive oil
- ½ tsp cinnamon
- ⅛-¼ tsp cayenne pepper
- ¼ tsp nutmeg
- Salt and pepper, to taste
Directions
Step one: Preheat oven to 400 degrees F and adjust oven rack to the center position. Line a 9x13 baking sheet with parchment paper, set aside.
Step two: Peel sweet potatoes and dice into 1-inch cubes. Toss potatoes with honey powder, olive oil, and spices until evenly coated. Spread into a single layer on the parchment lined baking sheet.
Step three: Bake potatoes for 30-40 minutes, or until tender when pierced with a fork. Stir potatoes after 15 minutes for even cooking. If potatoes brown too quickly before they’re tender; cover loosely with foil. Enjoy!
