  • 2 lbs chicken thighs, boneless and skinless
  • Salt & pepper
  • 1 1/2 cups buttermilk (6 tbsp Hoosier Hill Farm Buttermilk Powder)
  • 2 tbsp pickle juice
  • 3 large egs
  • 1 tbsp hot sauce
  • 3 cups flour
  • 2 tsp garlic powder
  • Canola oil

Directions

Step one: Mix together all waffle ingredients in a large bowl. Set aside.

Step two: Pat chicken thighs dry with a paper towel and season each with salt and pepper.

Step three: Make the marinade. In a large bowl, whisk together buttermilk, eggs, and hot sauce. In a second large bowl, whisk together 3 cups all-purpose flour, 3 tsp Kosher salt, and 2 tsp garlic powder.

Step four: Dip each piece of chicken first in the flour mixture, then in the buttermilk mixture, then again in the flour mixture, shaking off any excess. Repeat until all chicken strips are coated.

Step five: Heat the oil. Fill a large skillet or a heavy bottom pan with oil until it’s about 2” high. Heat over medium-high until the oil reaches about 350F. Fry the chicken until each is a golden brown color and has an internal temperature of 160F (about 6-7 minutes).

Step six: Make the waffles on a waffle iron.

Step seven: Place a fried chicken on top of a waffle and top with syrup.
