Step one: Place chicken on a cutting board and cover uncooked chicken with plastic wrap. Pound chicken until each piece is fairly thin and even thickness throughout. Then, coat each chicken with salt and pepper.

Step two: In a bowl crack all the eggs and stir together. In a second bowl combine flour, salt, and pepper. Then, in a third bowl combine bread crumbs and Hoosier Hill Farm Sizzlin Cheddar Seasoning.

Step three: Heat oil in a deep-fryer to between 350-375 F. Fry each chicken thigh in the hot oil until golden and crispy. Make sure the chicken is no longer pink in the centers (4-5 minutes flipping halfway through).

Step four: Once each chicken is fried, transfer to a plate topped with crinkled up aluminum foil to keep the bottoms from getting soggy.

Optional: Top with pickles, mayo, lettuce, and tomato.
